Who doesn’t love the smell of freshly baked cookies in your home? Better yet, who doesn’t love receiving homemade cookies?
To Inspire Hope in our communities shortly after the start of the COVID-19 pandemic this past spring, the Academy Mortgage team baked and, more importantly, shared more than 50,000 cookies with neighbors, friends, and people who were most impacted by the pandemic. Families came together to bake and deliver cookies to healthcare workers, police and fire stations, homeless shelters, etc.
Our “Caring Is Sharing” Cookie Campaign united team members who were working remotely and maintained Academy’s culture of service. The kind gestures are what people will remember, not the cookies.
To kick-off the campaign, a few of our team members shared family-favorite recipes for chocolate chip cookies. Enjoy!
Our Chairman of the Board Adam Kessler’s Favorite Chocolate Chip Cookies
- 1 c. butter
- 1 c. sugar
- 1 c. brown sugar
- 2 eggs
- 1 t. vanilla
- 2 c. flour
- 2½ c. oatmeal (blended into flour)
- ½ t. salt
- ½ t. cinnamon
- 1 t. baking soda
- 1 t. baking powder
- 2 c. chocolate chips
Cream together butter and sugars. Add eggs and vanilla. Mix dry ingredients and add to butter mixture. Stir in chocolate chips. Bake at 375° for 8–10 minutes. Makes the most delicious cookie dough!
Our CFO Greg Brown’s Favorite Chocolate Chip Cookies
- 3 squares butter
- 3 squares margarine
- 2 c. brown sugar
- 2 c. sugar
- 6 eggs (approx. 1¼ c.)
- 7 c. flour
- 2 T. vanilla
- 1 T. baking soda
- 1 T. baking powder
- 4 c. oatmeal
- 5 c. chocolate chips
Cream butter and margarine. Add sugars and continue beating. Add eggs 2 at a time and beat until light and fluffy. Add flour, vanilla, baking soda, baking powder, and oatmeal all at once and mix thoroughly. Add chocolate chips and mix well. Scoop out dough onto ungreased cookie pan (12 to a pan). Bake for 10–12 minutes at 375° or until slightly brown on top. Makes about 8 dozen cookies.
Our COO Kristi Pickering’s Favorite Chocolate Chip Cookies
Blend together with a mixer:
- 1 c. unsalted butter, softened
- 1 c. packed dark brown sugar
- ½ c. sugar
- 2 eggs
Blend with the butter and sugars:
- 2 t. vanilla
- 1 large box of instant vanilla pudding mix
Mix into the wet batter:
- 2½ c. flour
- 1 t. salt
- 1 t. baking soda
Mix in the chocolate chips:
- 2 c. semi-sweet chocolate chips
Bake at 350° for about 7–8 minutes (or until golden) on a parchment-lined cookie sheet.
